It was rediscovered during the cane sugar shortage of WWII and has been widely used since the 60s in Europe and Japan. This naturally sweet Xylitol has 75% less carbohydrate than cane sugar and is slowly absorbed and metabolized resulting in negligible changes in insulin levels.
